guacamole!
We are guacamole loving freaks around here. When the boys were little and I was making baby food, one of their favorite things to eat was avocado and bananas mashed together. They couldn't get enough of it.
And we still are loving it, only now with a little cilantro and onions and minus the banana.
Thought you might like my Mother-in-Law, Sofia's guacamole recipe.
GUACAMOLE
5 ripe avocados, peeled and cubed
1/2 of a large white onion, diced
1/2 of a large tomato (or two roma tomatoes), cubed
a handful of cilantro diced finely
juice of one lime
salt to taste
Smash the diced avocado with a fork (or you can put the avocado in a baggie and let your kids do this part, ours love smooshing them up). Add the onion, tomato, cilantro and lime juice. Mix it all in well and then salt it to taste. We do not add salt at all, but if you like it served in the restaurants, you might like the salt added.
Enjoy with chips or spread on sandwiches...mmmm...
